I think I would have given it 4 stars too. I am a huge fan of both eggplant to begin with, but this was a really unique way of preparing it, and the texture of the dish was pretty awesome. Me being me, I think I’d bump it to five stars after I played with the seasonings enough to get the kind of kick I like in Indian/Bengali food–I was surprised by how mild the flavors were. I do think I’ll try making this myself next time I get my hands on some fresh eggplant! Thanks for the great meal!

Thank you for the tip Amelia! I’ve never heard of doing that, I will have to give it a try with my easily boiled over fudge recipes.

If you want to stop your fudge from boiling over, before you put the ingredients in the pan rub a small ring of butter around the top of the pan. It only needs to be 1/4″ to 1/2″ wide at the very top of your pan.
